Recipes: Butternut Squash Soup

Butternut Squash Soup

Ingredients:

1 large butternut squash, peeled and cubed

1 tbsp olive oil

1 onion, chopped

2 cloves garlic, minced

4 cups vegetable broth

1/2 cup heavy cream or coconut milk

Salt, pepper, and cinnamon to taste


Instructions:

1. In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until softened.


2. Add butternut squash, broth, and seasonings. Simmer until squash is tender.


3. Blend the soup until smooth, then stir in cream and adjust seasoning. Serve warm.
