Vegetarian Mushroom Wellington
Ingredients:
1 puff pastry sheet
2 cups mushrooms, chopped
1/2 cup spinach
1/2 cup goat cheese or feta
Instructions:
1. Sauté mushrooms and spinach until tender.
2. Place filling in the center of the puff pastry, roll, and bake at 400°F (200°C) for 25-30 minutes.
